Ingredients

  • 100 gm Boiled Potatoes
  • 100 gm Corn flour
  • 30 ml water
  • 1 Tsp white sesame seeds
  • 1 Tsp Red Chilli Powder
  • 1/2 Tsp Five spice powder
  • 1 Tsp ginger garlic paste
  • 2 Tbsp oil

Instructions

  • Mash the Potatoes and Corn Starch: Mash your boiled potatoes in a bowl. Add the cornstarch and mix thoroughly. Slowly add water to the mixture until you have a smooth dough.
  • Shape and Cook the Noodles
  • Roll the Dough: Roll it out into long strips once your dough is ready. These strips will be your potato noodles.
  • Boil the Noodles: Bring a pot of water to a boil. Add the potato noodles and cook until they float to the surface. This should take just a few minutes.
  • Ice Bath: Drain the noodles and immediately transfer them to a bowl of ice water. This will stop the cooking process and prevent them from becoming mushy. Drain again and set aside.
  • Spice Mix: In a large bowl, combine the red chilli powder, garlic ginger paste, sesame seeds, five spice powders (if using), and salt. Place the drained potato noodles into the bowl with the spice mix.
  • Heat the Oil: In a small pan, heat the oil until it’s hot. Place all the toppings on the noodles and gently pour the hot oil over them. This step will infuse the noodles with the wonderful flavors of the spices.
  • Mix Well: Mix a pair of chopsticks or a fork to thoroughly mix the noodles, ensuring that each is coated with spicy, aromatic oil and spices.
  • Enjoy: Your homemade potato noodles are ready to be enjoyed. They’re soft, slurpy, and packed with flavour.
