To whip up this delicious Rajma Masala, you’ll need:
• 250 gm kidney beans, soaked overnight
• 3 tablespoons oil
• 1 cup onions, chopped
• 1 cup tomatoes, chopped or pureed
• 1 tablespoon ginger paste
• 4-5 garlic cloves, finely chopped
• 1 teaspoon cumin seeds
• 2 bay leaves
• 1 teaspoon turmeric powder
• 1 tablespoon coriander powder
• 1-2 green chillies, finely chopped
• 1 teaspoon garam masala
• Salt to taste
Instructions: Your Step-by-Step Guide to the Best Rajma Ever
Step 1: Prepare the Kidney Beans
Let’s start by preparing the kidney beans. If you’re using a pressure cooker, add the soaked kidney beans and 4 cups of water. Cook them until they are very soft, which usually takes about 5-6 whistles. If they aren’t soft enough, continue cooking for an additional 10-15 minutes. For those using an electric rice cooker, steam the beans until soft before adding water and setting aside.
Step 2: Cook the Masala
Heat oil in a pan over medium heat. Add the bay leaves and cumin seeds, allowing them to sizzle for a few seconds. Then, add the green chillies, onions, tomatoes, garlic, and ginger to the pan. Stir in the turmeric and coriander powders. Cook this mixture until the oil begins to separate from the masala, indicating that it’s well-cooked.
Step 3: Combine Beans and Masala
Add the cooked kidney beans along with their stock to the masala. Season with salt and stir in the garam masala. Allow the rajma to simmer for 15-20 minutes, so the flavors meld together beautifully. The longer it simmers, the more flavorful and creamy the rajma becomes.
Step 4: Serve and Enjoy
Serve your flavorful Rajma Masala hot with steamed rice or fresh chapati. It’s a comforting meal that’s perfect for any day of the week and sure to satisfy any craving for authentic Indian cuisine.
