Rice porridge is one of my most favourite comforting food. You can always make this when you prefer to eat something very light and soothing to your stomach.

Simple vegetarian rice porridge recipe. You can prepare the smooth congee in no time.

It is commonly known as jūk in China. There are many variations of congee (粥 or 稀飯)  you will find in each household in Asia. It is basically very soft rice boiled in water. Plain Rice porridge is a very common breakfast eat with youtiao in Asian countries, especially in Malaysia, Cambodia and Thailand. The different region uses a different quantity of rice and water, and also the time to boil the rice.

Rice porridge is my go-to food when I am under the weather or just want to eat something very light. It is very soft and easy to digest. Something I surely make when one of the family member not feeling well. the consistency and thickness of rice depending on the way you like it. You can add or reduce water as per your need. I prefer slightly thick rice porridge. But it really depends on your preference, and the best part is that you can fix it the way you want after cooking the porridge.

Tips

  • Porridge will start to thicken as you cool it down, so add the water as per your desire consistency, and serve it immediately.
  • You can store it in the fridge for few days(3-4) but try to eat fresh, I am really not a big fan of cold rice.
  • I prefer to use a stovetop to heat the porridge. You can also heat it in Microwave.
  • There is no right or wrong with toppings. Add toppings as you like. Sesame oil and Soya sauce are a must for me.

What type rice is right to make rice porridge?

I have tried many types of rice to make porridge and found Jasmine rice is the best for making porridge. It is also lower in carbs and calories as compared to white rice. Our body digests it easily.

How much water I should add in Porridge?

I always start with a 1 to 7 ratio. 1 cup rice and 7 cup water. Once the rice is cooked then I add a little more water if the porridge consistency is not the way I like.

Equipment

Ingredients

  • 1 Cup Jasmine Rice
  • 7 Cup Water
  • 1 tbsp Salt
  • 1/2 tbsp Grated Ginger
  • 1 tbsp Soya sauce
  • 1/2 Cup Chopped Spring onion
  • 1 tbsp Sesame oil
  • 1/2 tbsp ground black pepper
  • 1 tsp Black Sesame

Instructions

  • Wash the rice
  • Instant Pot- Add 1 cup rice, salt, grated ginger and 7 cup water in the instant pot. Select the rice porridge setting, and click on start.
  • Pressure Cooker – If you are using a pressure cooker then wait for at least 4 whistles.
  • Pot – You can boil it directly on the stovetop until you get desired consistency. The porridge is ready to serve.
  • Serving instructions
  • Take 2 cups of porridge in a bowl
  • Add 1 Tbsp Seasme oil (as per your taste)
  • Add 1 Tbsp Soya sauce
  • Add chopped spring onions around 1 Tbsp
  • Sprincle some black sesame
