Why Vegan noodles?
Because it is super healthy and delicious comfort food. One of the most popular street food in asia. I really can never say no to a bowl of vegetable noodles. Vegan noodles is a new edition in the quick recipe section. Especially for singles, working couples and moms looking for the sneaky way to sneak vegetables into kid’s diet. Initially, I thought that veggie noodles are such a simple recipe you may not like to see such recipes in a blog, but when I heard my female colleague appreciating the recipe, I thought it deserves to be in the blog.
I like that you can use any combination of vegetables available in your refrigerator, and the same goes for the available sauces.
Some tips and tricks
- Chop vegetables long and think, so it is quite easy to pick vegetables along with the noodles if you are using a fork or chopsticks.
- Some combination of vegetable compliments each other
- Carrot, cabbage, onion, spring onion saute with canola oil. Soya sauce, Tomato and chilli sauce.
- Spinach, garlic saute with olive oil. No sauce needed.
- Tomato, garlic, onion saute with canola oil. Tomato and chilli sauce.
- Mushroom, garlic saute with butter. no sauce needed.

Vegan noodles | Veggie noodles
Ingredients
- 1 cup chopped carrot
- 1 cup chopped cauliflower
- 1/2 cup chopped onion
- 1/2 cup spring onions
- 2 tablespoon soya sauce
- 1/2 tablespoon chilly sauce optional
- 1/2 tablespoon oil
- 2 cup cooked noodles I used steam noodles
- salt to taste
Instructions
- chopped all the vegetables including onion
- Heat oil in pan and add all vegetables
- Cook on medium flame for 2 minutes, add noodles and sauces
- I used steam noodles, so I directly cooked it with vegetables. otherwise boil noodles separately and then dran water and add in vegetables.
- Mix noodles well with sauces and vegetable and cook for another 1 minute.
- Noodles are ready
